Processed meat is defined by the World Health Organization (WHO) as meat that has been transformed by salting, canning, fermenting, smoking, or other processes to improve flavor and shelf life.

These ready-to-eat meat products include bacon, sausages, sausages, sausages, juicy beef, canned meat, and more. They are among the main sources of saturated fat in the diet of Russians (26% of the total consumption basket).

When it comes to processed meats, the most well-known health risk is cancer. After reviewing statistics from large-scale studies and animal studies, WHO has classified processed meat as "carcinogenic to humans", ie. capable of causing cancer.

The International Agency for Research on Cancer noted that there is "sufficient evidence" that consumption of processed meat causes colon cancer. Limited research data also suggests a link between consumption of these products and stomach cancer.

In addition, a recent survey by the T.H. Harvard School of Public Health Chan (Harvard TH Chan School of Public Health) found a strong correlation between processed meat consumption and breast cancer (9% risk).

“Previous work has been linked to an increased risk of certain cancers with higher meat consumption, and this recent meta-analysis shows that consumption of processed meat may also increase the risk of breast cancer. Therefore, reducing the consumption of processed meat appears to be beneficial for the prevention of breast cancer,”said Dr. Maryam Farvid, lead author of the study.

Consumption of processed meat products increases the risk of other types of cancer, but inconsistent research results do not yet provide sufficient evidence.

In addition to cancer, high blood pressure is a possible health risk. A 2014 study of over 44,000 women found a link between consumption of processed red meat (as opposed to fresh meat) and hypertension. Therefore, the hypothesis seems plausible, according to which the “culprit” is the high content of salt, which is used in these products as a flavoring and preservative.

Another potentially dangerous preservative is sodium nitrate. By damaging blood vessels, it increases the risk of cardiovascular disease. Therefore, to maintain heart health, health experts are calling for the elimination of processed meat from the diet.

Considering all these aspects, nutritionists recommend limiting the consumption of processed meat and switching to fresh meat, while reducing the portion. And the healthiest diet, according to nutritionists, is the Mediterranean diet rich in fruits, vegetables, seafood, olive oil, nuts, and whole grains.
